I recently put together this recipe as a lunch or afternoon pick-me-up and I am head over heels for the taste and benefits! Quite simple and quick to make and versatile, can be eaten by itself or as a side dish, I've put it over over a salad in replacement of dressing and one of my favorites is using a piece of bread or pita to scoop and eat it with. However you choose to serve it I'm sure you will like it. Go ahead and give it a try, let me know what you think!
4 cups cooked quinoa
1-2 Avocado (depending on how much you like avocados)
3-4 plum tomatoes
1 bell pepper (orange or yellow are good)
1 large handful of fresh spinach (optional)
1/2 cup olive oil
2 tsp salt (use good sea salt)
3 Tbs balsamic vinegar
1/2 tsp garlic powder
1 Tbs dried basil (or a good handful of fresh if you have it)
1.Cook your quinoa ahead of time and let it cool to room temperature 2.Chop all the vegetables fine 3.Mix in the oil, vinegar, and spices with the vegetables 4. Mix in the quinoa.
